Creamy Tomato Soup

1 medium yellow onion, diced
2 cloves garlic, minced
1 large can diced tomatoes
1 large can crushed tomatoes
1 can coconut milk
Salt, pepper, and fresh basil to taste

In a large saucepan, cook onion and garlic until golden (you can use olive oil or broth if desired). Add tomatoes and spices and simmer on low heat for 8-10 minutes. Add coconut milk and basil. Serve warm.
